The last time Umberto Bombana visited Shanghai was in 2019 for 8½ Otto e Mezzo BOMBANA Shanghai 7th Anniversary, and though the world has changed a lot since then, he was moved by the Shanghai team’s consistent commitment to quality, so he made the decision to come to Shanghai as soon as Covid restrictions were relaxed.

Umberto Bombana先生出生於意大利北部的貝加莫,在學廚生涯中頻遇良師,逐漸樹立起極富個人風格的烹飪理念。2002年,他獲得意大利外國人烹飪學院頒發Italian Culinary Institute for Foreigners(ICIF)頒發的“全亞洲最優秀意大利菜廚師”一殊榮,又於2006年,獲得意大利 Piedmontese Regional Enoteca Cavour委任為「國際白松露大使」,被世人稱為「白松露之王」。

Umberto Bombana hails from Bergamo in northern Italy, where he developed an interest in food at a young age. He moved to Hong Kong in 1993 to open Toscana at the Ritz-Carlton, which he led for 15 years. In 2002, he was awarded the title of “Asia’s Best Italian Chef” by the Italian Culinary Institute for Foreigners, and in 2006, he was appointed “International White Truffle Ambassador”by the Piedmontese Regional Enoteca Cavour. Today, he is known around the world as the “King of White Truffles.”

2010年,Umberto Bombana先生在香港自立門戶,以他鐘愛的意大利殿堂級導演費裡尼經典名作《8½ 》為餐廳命名,開設8½ Otto e Mezzo BOMBANA餐廳,於2011年獲得米其林三星殊榮並保持至今——這是在意大利本土之外唯一獲此榮譽的意大利餐廳。2013年餐廳更成為「全球最佳50大餐廳」之一,亦是香港唯一入圍的米其林三星食府。

In 2010, Chef Bombana opened his own restaurant in Hong Kong, naming it after his favourite director, Federico Fellini’s, masterpiece 8½. In 2011, 8½ Otto e Mezzo BOMBANA Hong Kong was awarded three Michelin stars, the only Italian restaurant outside of Italy to receive this honour. In 2013, the restaurant was named one of the World’s 50 Best Restaurants.

隨後,Umberto Bombana先生在上海、北京開設“BOMBANA”理念為品牌的高品質餐廳,上海8½ Otto e Mezzo BOMBANA自2017年起榮獲上海米其林指南二星殊榮,至今蟬聯7年

Chef Bombana then opened restaurants in Beijing and Shanghai, with 8½ Otto e Mezzo BOMBANA Shanghai receiving two Michelin stars in the 2017 Michelin Guide Shanghai, an honour it has maintained for seven consecutive years.

Chef Gabriele Delgrossi出生於廚師世傢,於2015年來到米蘭四季酒店,師從意大利烹飪大師塞爾吉奧·梅(Sergio Mei)學習深造。Chef Gabriele在米蘭四季酒店擔任兩年的副廚師之後,來到巴黎喬治五世四季酒店,擔任主廚 Simone Zanoni的第二副手。在法國的三年時間,Chef Gabriele於2017年獲得他人生中第一顆米其林之星,也令餐廳摘得意大利大紅蝦指南(Gambero rosso guide)的“海外最佳意大利餐廳”榮譽,並由此開啟瞭他的米其林摘星之旅。

Chef Delgrossi was born into a family of chefs. In 2015, he joined the Four Seasons Hotel Milano, working under Italian culinary master Sergio Mei, before moving to Paris to work under Simone Zanoni at Four Seasons Hotel George V. During his three years in Paris, Chef Delgrossi won his first Michelin star in 2017, and the restaurant was named “Best Overseas Italian Restaurant” by Gambero Rosso.

2018年,Chef Gabriele受邀前往中國,在北京寶格麗酒店Niko Romito擔任主廚,於2019年為餐廳摘得第一顆米其林之星。2021年,Chef Gabriele得到Umberto Bombana先生器重,來到上海執掌世界上最頂級的意大利餐廳之一——上海8 ½ Otto e Mezzo BOMBANA餐廳。在這裡,Chef Gabriele揮灑著自己的才華和創想,為上海食客帶來純正而優雅的頂級意大利美食藝術享受。

In 2018, Chef Delgrossi moved to China to served as Chef de Cuisine at Niko Romito of Bulgari Hotel in Beijing, winning a Michelin star for the restaurant in 2019. In 2021, Chef Bombana invited him to Shanghai to manage the kitchen at 8 ½ Otto e Mezzo BOMBANA, where he uses his considerable talent to create some of Shanghai’s best Italian cuisine.
